Essential Ingredients:
4 Potatoes
2 Sweet Potatoes
2 Brinjals
2 Small Pieces Yam
The Stuffing:
1/2 Coconut
1/2 Bounch Coriander Leaves
2 tsp Gram Flour
2 tsp Coriander Cummin Powder
1 Piece Ginger
6 Green Chillies
1/2 tsp Turmeric
Asafoetida
Oil
Salt
Cooking Instructions:
Grind coconut, chop the coriander leaves, ginger and green chillies. Mix all the spices and coconut together with salt. Add two tsp. oil and mix well. Peel potatoes, sweet potatoes and yam. Stir vegetables into four. Stuff with prepared masala. Bind together. Heat 1/4 cup oil in a pan. Add the vegetables. Stir well. Cook over extremely slow fire for one and hal an hours, keeping a little water on the lid of the pan to prevent burning. The vegetables and spices should be well cooked. Test for salt and remove.
