Shanghai Omelette

Ingredients:

4 Eggs
15gm Leeks
1 Carrot
5 Flaked crab Or prawns
4 tsp Cabbage
1 Onion
1 Capsicum
To taste Salt
To shallow fry Oil

Method:

Wash and shred vegetables. Cut up the capsicum finely. Beat up eggs slightly. Add vegetables, chopped prawns, salt, capsicum and mix. Pour into hot oil and fry lightly like pancakes. Garnish rice with strips of omelette.
