Ingredients:
8 Eggs
500gm Potatoes
200gm Onions
100gm Peas
100gm Oil
½ tsp Coriander
1 piece Ginger
Salt to taste
¼ tsp Turmeric
¼ tsp Cumin
¼ tsp Pepper
¼ tsp Garam masala
(Cloves, cinnamon
Cardamoms each 2 pieces)
Curry leaves a few
3 Red chilies
1 tsp Fat
Methods:
Hard-boil, cool and shell eggs. Cut into halves. Peel and quarter potatoes; peel and slice onions. Heat oil. Brown eggs and onions separately. Remove. Add potatoes and peas to oil and then the coriander, pepper, cumin, ginger, garam masala, turmeric and two red chilies ground to a fine paste. Add hot water and salt. Cook till potatoes are done. Add onions and eggs. Heat fat, add the remaining red chilly and curry leaves. Pour over curry and mix well.
