Ingredients:
500gm Rice
200gm Leeks
200gm Carrots
200gm Cabbage
200gm Onions
50gm Celery
4 Eggs
100ml Salad oil
100ml Tomato ketchup
40-50 ml Soya-bean sauce
200gm Prawns or pork
A pinch Turmeric
To taste Salt
Method:
Prepare fried rice and cook till three-fourths done. Shell prawns. Remove intestines. Wash well, smear turmeric and salt and fry. (If pork is used boil with peppercorns and salt and cut into cubes) Shred vegetables. Heat oil. Add vegetables. Sauté. Add beaten eggs and scramble. Add prawns and rice. Fry for a few minutes. Add sauces. Cover and cook till done. Remove and serve hot with shanghai omelet, capsicum salad and chilly sauce.
N.B. When fried rice is made in large quantities divide into smaller portions and mix.
