Beans Usal

Essential Ingredients:

500 gms Dried Beans
4 Onions
1/4 tsp Turmeric
8 Red Chillies
1/2 tsp Mustard Seeds
A pinch Asafoetida
5 tsp Tamarind
12 Green Chilles
1/4 Cup Coconut
1 1/2 tsp Coriander-cummin powder
4 tsp Jaggery
Coriander Leaves
Salt to taste
Oil

Cooking Instructions:

Drain the water after soaking the beans overnight. Hang in a piece of muslin to sprout. Boil in the same water in which they were soaked, with green chillies, until tender. Heat oil and add mustard seeds, as they crackle, add chopped onions. When onions are golden brown, add turmeric, red chillies, asafoetida, and coriander-cummin powder. Add boiled beans and cook for fifteen minutes. Add tamarind, jaggery and salt. When cooked, serve hot garnished with grated coconut and coriander leaves.
