Ingredients:
250gm Potatoes
½ Coconut
4 Red chillies
1 tsp Tamarind
To taste Salt
A pinch Asafoetida
Coconut oil
Method:
Wash, boil, peel and cut potatoes into large pieces. Grind into a fine paste, chillies, tamarind and grated coconut. add ground spices to the potatoes with enough water to barely cover solids. Add salt., Bring to boiling point. Reduce heat and simmer till spices are cooked. Remove from fire. Mix asafoetida in a little water. Add to curry along with fresh coconut oil. Mix well.
